Cosmic Brownies

No need to visit the store to have cosmic brownies at home. These are packed with delicious fudge flavor and are a treat for every kid’s lunchbox!

School is officially back in session (which seems to unfair…it’s still summer and it feels like it’s about 4,786 degrees outside) and with it comes the great packing of the school lunches. And what belongs in those lunches? Why, Cosmic Brownies of course!!!

I’ve stated before that brownies may be my all time favorite dessert, but I never liked cosmic brownies. Maybe they tasted too chemically, maybe it was the texture, or maybe because they weren’t around when I was a kid. I don’t know. Just wasn’t ever a fan. I would DESTROY some Ding Dongs (or King Dons…if you know, you know), Ho Ho’s, Twinkies and, my all time favorite, Fruit Pies. Remember those things? They were coated in about 16 inches of glaze and sat like lead in your stomach, but man were they good! Yup, we were definitely a Hostess family.

But my kids were huge fans of cosmic brownies and would beg me to buy them when I went grocery shopping. I didn’t buy a lot of pre-packaged treats (homemade is just better in every way, shape and form) but I would occasionally relent. 

Now that classes are back in full swing, I thought what better way to kick off the year than with a batch of these. They are just as dense and fudgy as the original, but without the extra junk and preservatives. And they have sprinkles! 🙂 Enjoy!

Cosmic Brownies

Ingredients
  

Brownie Ingredients

  • 1 stick unsalted butter melted
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 tablespoon corn syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup flour
  • 3/4 cup Dutch cocoa powder
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup mini chocolate chips

Frosting Ingredients

  • 1/2 cup heavy cream
  • 1 1/2 cups semisweet chocolate chips
  • Sprinkles!!!

Instructions
 

  • Preheat oven to 350 degrees and grease an 8 x 8 pan, lining with parchment if desired.
  • Melt the butter in a large bowl using the microwave. Mix in the sugars until well blended. Add in the eggs, corn syrup and vanilla extract, mixing until combined.
  • Sift together the flour, cocoa powder, baking powder and salt. Add to the egg mixture, along with mini chocolate chips, and blend until just combined. The mixture will be very thick.
  • Spread into prepared pan and bake at 350 degrees for 30-32 minutes or until just a few crumbs cling to a toothpick upon testing. Remove from oven and cool completely on wire rack.
  • To make the ganache, heat heavy cream until just steaming (about a minute if you use the microwave) and pour over chocolate chips. Let stand for five minutes and stir until chocolate is melted. Pour over cooled brownies and spread. Top with sprinkles.
