Savory cheddar scones are the perfect compliment to warm, winter comfort food!

Happy New Year! Hoping your New Year is off to a better start than ours. I live on Virginia, where we just don’t get a lot of snow…except when it decides to all come down at once. And that’s what happened last week. In a normal year we get a few inches of snow. Last week we got a foot and a half in the span of about six hours.

As a kid in Nebraska, a foot and a half of snow would be nothing. Hell, that would  barely cause the schools to close! But living in a state that’s just not equipped to deal with that much snow, it can be a nightmare. The roads don’t get plowed, stores get bought out of bread, milk and toilet paper, and everyone loses their minds and thinks “I’ll be fine driving around here in my Mini Cooper.” News flash…you’re not going to be fine driving around in your Mini Cooper…trust me. We lost power for about three days, but I count myself lucky because I have a gas fireplace and a gas stove, so it could have been a whole lot worse.

The big heroes of the day for me are the lineman who work out in the freezing cold. If you know anyone out there who works as a lineman, hug and kiss them and thank them for all their hard work. They are the unsung heroes who keep the lights on for all of us, and it’s rough going in 10 degree weather. Or maybe just bake them some of these scones! 🙂

Savory Cheddar Scones

Prep Time 15 minutes
Cook Time 20 minutes
Course Breakfast, Side Dish
Servings 12

Ingredients
  

  • 2 ½ cups all-purpose flour
  • 1 ½ tablespoons granulated white sugar
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • ½ teaspoon powdered garlic
  • ¾ cup unsalted butter cubed
  • 1 ½ cups shredded cheddar cheese
  • ½ cup milk
  • 1 egg

Instructions
 

  • Preheat oven to 400 degrees.
  • Line a baking sheet with parchment or a silicone mat.
  • In a large mixing bowl, whisk together flour, sugar, baking powder, salt and garlic. Cut on the butter using your fingers or a pastry cutter until the mixture clumps together and there are a few pea-sized pieces of butter left. Fold in the shredded cheddar.
  • In a separate bowl, beat together the egg and the milk. Add to the flour mixture and mix gently until mixture just beings to come together.
  • Turn mixture onto counter and knead five or six times, until mixture comes together into a slightly sticky dough.
  • Divide dough into three equal portions and shape each portion into a disk about 1” thick. Cut each disk into four equal wedges and place on prepared baking sheet.
  • Bake in a preheated oven for 17-20 minutes or until golden brown.
