Peanut Butter Cookies

These peanut butter cookies are sweet, simple, chewy and homey.

Do you ever feel like you’ve been shot out of a cannon? That’s how I’ve been living my life over the past few months. I seem to recall, somewhere in my memory, that summer was a time for relaxing. It was a time for slowing down, reconnecting with family and friends, taking a vacation…that sort of thing.

But not for me. Nope. In the past few months, I’ve had my daughter’s birthday, my son’s birthday and my nephew’s birthday. I’ve hosted a backyard prom, hosted a Fourth of July party, attended my son’s graduation and moved him into his apartment so he could start his new job as an apprentice electrician (cannot say enough about how proud that makes me!). I spent another summer as the secretary for my daughter’s swim team. And now I’m getting ready to attend my daughter’s back to school night. In short, I’m spent.

Which is why I’ve pretty much done nothing in the kitchen. It’s not too terrible since we’re only a few months away from prime baking season, but I had to spend a few minutes making something simple and quick that I absolutely love. So I landed on peanut butter cookies.

As much as I love chocolate, I may actually love peanut butter even more. I’m one of those people who would happily eat peanut butter straight out of the jar with a spoon (yes, with a spoon…no, not like George Constanza when he was “off bread”). Smooth, chunky, natural, organic, I’ll take it all. And come Halloween, you will typically find me buried under a mountain of Reese’s wrappers. I guess that’s why for my birthday I made this cake.

Peanut Butter Cookies

Ingredients
  

  • ½ cup unsalted butter
  • ½ cup smooth peanut butter not the organic kind that separates
  • ½ cup white sugar
  • ½ cup dark brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 ¼ cup all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup additional white sugar

Instructions
 

  • Preheat oven to 375 degrees. Line baking sheets with silicone liners or parchment paper.
  • In a large mixing bowl, cream butter and peanut butter on high for about 30 seconds. Add in sugar and brown sugar and cream on high for two minutes. Add in egg and vanilla and mix until well combined.
  • In a separate bowl, combine flour, baking soda, baking powder and salt. Mix into peanut butter mixture until well combined. Set in refrigerator to chill for about half an hour.
  • Add additional white sugar to a small bowl. Scoop chilled dough into golf ball sized portions and roll in sugar. Set onto prepared baking sheets about two inches apart (they will spread). Take a fork and flatten the balls using a criss-cross pattern.
  • Bake a 375 degrees for 10-12 minutes, or until the edges barely begin to turn golden brown. Cool on a wire rack.

Want to add stuff in? Knock yourself out! Great add-ins include peanuts (duh!), honey roasted peanuts (yum!), chocolate chips, pretzel bits, butterscotch bits…you name it!
