Brown Butter Blondies

Brown butter, brown sugar and maple syrup combine in these toffee-flavored, chewy treats!

Probably not the best way to start a food blog post, but blondies always seemed kind of like a cop out to me…sort of like a shortcut to making chocolate chip cookies. (I guess you don’t actually have to put chocolate chips in them, but I mean, why wouldn’t you?) Brownies may be my favorite dessert of all time, and my husband’s favorite by far is chocolate chip cookies, so I inevitably wind up making one or the other.

But I’ve recently changed my mind on the issue. Blondies have a dense, fudge-like texture but without the actual fudge flavor. Well, minus any chocolate chips you might add I suppose.

By browning the butter and using maple syrup instead of white sugar, you add an extra depth of flavor to these. They taste almost toffee-like and a little bit nutty (speaking of which walnuts would be a wonderful addition), and they would be absolutely amazing warmed with a little bit of vanilla ice cream on top. Brown Butter Blondies

Ingredients
  

  • 6 tablespoons unsalted butter browned
  • 1/4 cup maple syrup
  • 1/2 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 cup semi-sweet chocolate chips optional

Instructions
 

  • Preheat the oven to 350 degrees. Grease an 8 x 8 pan, and line with a parchment sling.
  • To brown the butter, heat over medium heat, swirling the pan occasionally until the butter melts. The butter will begin to foam up. After the foaming subsides, watch carefully as the butter will start to develop brown flecks and will begin to have a nutty smell. This should take about five minutes or so. Remove from heat and transfer to a medium-sized mixing bowl.
  • Whisk in the brown sugar and maple syrup. Whisk in the egg and vanilla extract. Add in the flour, baking powder, baking soda and salt. Mix until just combined and then blend in the chocolate chips.
  • Transfer to greased and lined baking pan. Bake at 350 for 20-25 minutes or until just set.
