Chili
Chili is one of the most perfect meals. I don’t know anyone who doesn’t like it in one fashion or another. I know there are plenty of chili aficionados out there (my kids’ elementary school has a chili cook-off every year and it’s one of their most popular events) and I know everyone also has an opinion about which kind of meat, whether of not chili has beans, etc. But this is how I grew up eating it and, therefore, this is how I like it. So there!
But seriously, I love making this because I can prep it in the morning and throw the whole thing in the crock pot, let it sit there all day and by the time dinner rolls around I don’t have to do a damn thing because it’s already done!

- Crock pot
Ingredients
- 1 pound ground beef or ground turkey
- 1 29-ounce can of tomato sauce
- 1 small onion, chopped
- 2 15-ounce cans of beans, drained and rinsed (I usually use one can of kidney beans and one can of black beans.)
- 1/2 cup frozen corn kernels
- 1/4 cup chili powder
- 2 teaspoons cumin
- 1 teaspoon minced garlic
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
Instructions
- Brown beef or turkey in large, deep skillet. Just before meat is done, add onions and garlic to soften. Drain.
- Add meat, onions and garlic to crock pot. Stir in remaining ingredients and cook on low for 4-6 hours. Can also be simmered on the stove on low for half an hour to an hour.
