Small Batch Chocolate Chip Cookies

This recipe for chocolate chip cookies only makes four cookies, so it’s perfect for a small treat!

This was one of the busiest and craziest summers I’ve had in a long time. Both my kids flew the nest (my daughter is off at school and my son joined the Army) and now I’m officially an empty nester. 

It’s a strange and kind of lonely place to be. I keep hearing from friends who’ve been through it that it will get easier, and I know it’s the natural order of things. But I keep crying every time I see their empty rooms, or pass by the place where they used to dump their shoes ( and where I would yell at them to pick up their shoes!), or think about how I’m not making dinner for four anymore. Time moves way to fast.

But them being gone hasn’t curbed my desire to bake! I just have to modify for my husband and me so we don’t gorge ourselves all the time. 😁

So this recipe for four cookies is perfect. We get a sweet treat, and don’t feel like we’ve over-indulged. In short, we get to have our cake (or cookie) and eat it too.

Small Batch Chocolate Chip Cookies

Ingredients
  

  • 3 tablespoons unsalted butter room temperature
  • 3 tablespoons brown sugar
  • 1 1/2 tablespoons granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 tsp salt
  • 1/3 cup chocolate chips
  • 1/4 cup chopped walnuts optional
  • flaked sea salt for sprinkling optional

Instructions
 

  • Preheat oven to 350 degrees and line a baking sheet with parchment or silpat.
  • Mix the softened butter, brown sugar and sugar together until well blended. Add in the egg yolk and vanilla, mixing well.
  • Add in the flour, baking powder, baking soda and salt. Mix until most of the flour is blended in, and then add in chocolate chips and walnuts (if using).
  • Divide mixture into four equal portions (roughly 1/4 cup each). Tip with flaked sea salt and any additional chocolate chips. Bake at 350 degrees for 12-14 minutes or until the edges turn golden brown. Cool on wore rack.
