Preheat oven to 325 degrees and spray an 8” pan with cooking spray. (Optional step…line the pan with a parchment sling. To do this, cut a piece of parchment that is the width of the pan, but a couple of inches longer on either side. Press down into the pan.)
Combine the chocolate chips and butter in microwave-safe bowl. Microwave at 50% in 30-45 second intervals, stirring in between until melted and smooth. Set aside to cool for about five minutes.
In a large bowl, mix the flour, cocoa, and salt together. Add in the eggs, vanilla, coffee granules and sugar. Add in the melted chocolate and mix until just combined.
Fold in 1/2 cup chocolate chips (or 1/2 cup chopped nuts, or 1/2 cup of whatever the heck you prefer!). Bake at 325 for 40 to 45 minutes (I usually check after 35, just in case…it all depends on how hot your oven gets) until a toothpick comes out mostly clean. (Mostly is the key word here. You want a few wet crumbs on the toothpick. Otherwise they’ll be over-baked and over-baked brownies just suck.)
