In the bowl of a stand mixer, combine the water, honey and yeast. Set aside for 5-10 minutes or until yeast is frothy.
Add in the flour, salt and softened butter and knead using the dough hook for about 3-4 minutes or until dough comes together in a ball.
Transfer dough to greased bowl and cover with plastic wrap. Set aside and allow to rise for one hour or until dough has doubled in size.
Punch dough dough and roll or pat into a roughly 8" x 10” rectangle. Using a pizza wheel, cut into 12 breadsticks and transfer to baking sheet lined with parchment or silicone. Cover loosely with oiled plastic wrap and set aside to rise for 30 minutes.
Preheat oven top 400 degrees and bake breadsticks for 18-20 minutes, rotating pan halfway through baking time.
While breadsticks are baking, combine melted butter with garlic powder. Once breadsticks are done, brush with melted butter and tip with shredded parmesan if desired. Serve warm.
